Twenty-eight year old Executive Chef and Owner, Jason Dady, opened The Lodge Restaurant of Castle Hills in October of 2001. Chef Dady came to San Antonio with the mission to own a restaurant that would exceed the expectations of his guests every visit and to revive the lost art of hospitality and service.

Chef Dady's dedication to his mission and passion for food has been recognized on a national, regional and local level. He received national acclaim in February 2004 with a "Rising Star" chef award by Restaurant Hospitality. And the restaurant has received rave reviews from Southern Living, Texas Monthly, Texas Journey and San Antonio Express--News.

Chef Dady studied at Texas Tech University and graduated with a B. A. in Restaurant, Hotel and Institutional Management. Upon graduation he moved to San Francisco to attend the prestigious California Culinary Academy (CCA). While in California, Chef Dady worked at the then world renowned Stars Bar and Dining under the tutelage of Chef Chris Fernandez. Upon graduation from the CCA, Chef Dady traveled north to Napa Valley and Beringer Wine Estate. Chef Dady honed his skills and etched his New American style of cooking under Executive Chef David Frakes. Dady also participated in the opening of two restaurants. His passion for the restaurant industry, food knowledge and work experience makes for an exceptional understanding of the complete food and wine experience of each guest.

Dady’s family roots are firmly set in the hospitality industry. Having grown up with one set of grandparents (Gale and Ollie Dady) owning a small tavern for nearly 40 years, Chef Dady learned the importance of every customer. His maternal grandfather (Charlie Murphy) was a master butcher and the locals' favorite meat expert. Chef Dady still uses his grandfather’s butcher knives at his restaurant today.

At an early age Chef Dady fell in love with cooking and the art of food, having growing up around both his grandmothers’ cuisine. Dady's passion grows stronger every day and he has a simple philosophy, "Work hard and strive to be the best. Nothing less."

Chef Dady, along with his wife, Crystal, and his brother, Jake, have opened the Lodge with one goal in mind, "Be the best." They want every guest at The Lodge to submerge themselves in the complete dining experience. The Lodge offers the ambiance, the history, the passion and the cuisine that is unmatched. Chef Dady has established himself as a leading young chef in Texas, and he strives everyday to make his restaurant the best that Texas has to offer. Nothing less!
